GEODUCK SAUTEED ENJOY DAN:

GEODUCK SAUTEED FRITTERS WITH SWEET C HILI SAUCE by CHEF DAN:
Serves 4

INGREDIENTS:
1 cups flour
1 teaspoon baking powder
1 teaspoon garlic powder
1 teaspoon ginger powder
1/3 cup clam juice
2 eggs (beaten)
1/3-cup milk
1 geoduck clam (cleaned and diced see note) thinly sliced on the bias
1 pinch of kosher salt
1 tablespoon lemon juice
3 tablespoons butter
1 cup sweet chili sauce (for dipping)

DIRECTIONS:
1.   Meat from one good sized geoduck, thinly sliced on the bias.
2.   Sift the flour, baking powder, garlic and ginger powder, and a pinch of salt in a mixing bowl.
3.   Combine the eggs, lemon juice, clam juice, and clam meat.
4.   Add milk as necessary to make a thick but not gluey batter, mixing well.
5.   Heat butter in a skillet over medium-heat until foams form.
6.   Add geoduck slices and cook until golden, turning carefully to do all the sides.
7.   Serve with sweet chili sauce.

CLEANING:
1. Insert a paring knife between the shell and body at the base of the neck.
2. Run the knife along the edge of the shell.
3. Do not cut through the adductor muscle which is connected.
4. Remove the stomach which is dark and oval shaped, about the size of an egg.
5. A tough skin encases the and body, remove by quickly boiling the clam meat, not longer than 12-seconds.
6. Now the skin will peel off easily.
