THAI CHICKEN SALAD by CHEF DAN:
Serves 4
INGREDIENTS:
2 cups cooked chicken
2 teaspoons olive oil
1 head of romaine lettuce, chopped into bite size pieces, or cabbage
1/4- cup lime juice
1 jalapeno, seeded and chopped
2 teaspoons soy sauce
2 teaspoons fish sauce
1 cup carrots, shredded
1/2- cup fresh cilantro leaves
1/2- cup mint leaves
1 teaspoon brown sugar
DIRECTIONS:
1. In a large bowl, whisk together lime juice, jalapeno, oil, and sugar, stir until mixed thoroughly.
2. Add romaine, carrots, cilantro, mint, and chicken, toss to combine.
