ROASTED BUTTER CUP SQUASH WITH RICOTTA CHEESE ENJOY DAN:

ROASTED BUTTER CUP SQUASH WITH RICOTTA CHEESE by CHEF DAN:
Serves 4

INGREDIENTS:
1 butter cup squash
1/4-cup ricotta cheese
3 garlic cloves, minced
Olive oil
Sea salt and freshly ground black pepper to taste

DIRECTIONS:   (PE-HEAT OVEN TO 400 DEGREES)
1.      Slice butter cup squash lengthwise.
2.      In a baking sheet sprayed with Pam  place the squash and garlic
3.      Brush with olive oil to nicely coat.
4.      Bake the squash and garlic for 35-40 minutes so it gets a nice crispy top.
5.      Take out of the oven, top with some ricotta cheese and drizzle with olive oil.
