COLLAGE BOYZ EGGS WITH CORN TORTILLA ENJOY DAN:

COLLAGE BOYZ SCRAMBLED EGG WITH CORN TORTILLA by CHEF DAN:
Serves 4       (FOR JONATHON AND J-BOB)

INGREDIENTS:
2 tablespoons olive oil
1 cup picante sauce
6 corn tortillas cut into 1-inch triangles
1/2- onion, diced small
1 poblano chili, seeded and small dice
1 tomato, diced
8 eggs
3 tablespoon milk
1/2 cup shredded Monterey Jack cheese

DIRECTIONS:
1.   Crack eggs into a bowl; add milk and 2 tablespoons picante sauce.
2.   Whisk until well blended.
3.   In skillet add oil over medium-heat when sizzling.
4.   Add tortillas triangles, stirring frequently for about 6 minutes, or until golden brown.
5.   With a slotted spoon, transfer to paper towels to drain.
6.   Add onion and poblano Chile and sauté for 5 minutes.
7.   Add tomato and salsa and cook 2 to 3 minutes.
8.   Season with sea salt and pepper to taste
9.   Add egg, tortillas, and cheese, cook, stirring constantly until eggs are set, about 3 minutes.
