IRISH SODA BREAD FROM ELLIE MACEY ENJOY DAN:

    IRISH SODA BREAD RECIPE FROM ELLIE MACEY by CHEF DAN:
(Given to Ellie from her kindergarten student whose grandmother was born in IRELAND)     (Important to use CAST-IRON fry pan)

IRISH SODA BREAD INGREDIENTS:
5 cups flour
1/2-cup sugar
5 teaspoons baking powder
1/4-teaspoon baking soda
1 teaspoon salt
3 cups milk
2 cups raisins
1 stick good butter-NOT margarine
Couple tablespoons sugar

DIRECTION:
1.   Put raisins on a cookie sheet and place in a cold oven.
2.   Turn oven to preheat for baking 375 degrees and leave the raisins in for about 10 minutes-some will plump up.
3.   Grease a 10 X 12-inch CAST IRON fry pan.
4.   Sift all dry ingredients together and then mix in the milk and raisins using a fork.
5.   DO NOT OVER MIX.
6.   Put the dough in the fry pan and bake in the oven.
7.   Bake 375 degrees for 45 minutes.
8.   Immediately turn the bread onto a serving plate and rub the top and sides  with the stick of butter,
9.   She usually uses 1/4-to 1/2-stick.
10.                Sprinkle a little sugar on the top.
11.                Serve with butter and or jelly.
12.                It tastes great toasted the next day if you have any left.
