MASHED POTATOES WITH LOADS OF GARLIC ENJOY DAN:

MASHED POTATOES WITH GARLIC AND PARMESAN CHEESE by CHEF DAN:
Serves 8

INGREDIENTS:
8 Yukon Gold potatoes, peeled and diced
1/4- teaspoon garlic powder
10 garlic cloves, minced
4 tablespoon butter, cut into 4 pieces
1 (8 Oz) package cream cheese
2 tablespoon Parmesan cheese, grated
Sea salt and freshly ground black pepper to taste
2/3-cup warm milk or reserved potato water

DIRECTIONS:
1.   Place potatoes in a sauce-pan and add cold water to cover by 1-inch.
2.   Bring water to simmer over medium-high heat.
3.   Adjust heat to maintain gentle simmer, and simmer 18-22-minutes.
4.   Combine garlic powder, garlic, and 1 teaspoon water in a mortar and pestle.
5.   Make mixture into a fine paste.
6.   Melt butter in a skillet over medium-low heat.
7.   Stir in 1-tablespoon garlic paste and cook, stirring constantly, until fragrant and golden brown, about 1 minute.
8.   Transfer to a bowl and stir in and Parmesan cheese.
9.   Season with salt, pepper and any remaining garlic mixture.
10.                Drain the potatoes and return to the pot, reserving 1 cup potato water.
11.                Add butter, garlic paste, Parmesan, and cream cheese.
12.                Stir in warm milk or reserved potato water.
13.                Mash with a potato masher or electric mixer.
14.                Season with salt and pepper.
