EDAMAME SALAD WITH FETA CHEESE ENJOY DAN:

EDAMAME SALAD WITH FETA CHEESE by CHEF DAN:
Serves 4

INGREDIENTS:
8 cups of water
1-1/2cups frozen shelled edamame
1/2-cup frozen peas
1-1/2-teaspoon rice wine vinegar
1-1/2-dark sesame oil
1-cup sliced onion
1-cup sliced cucumber
1 cup shredded carrot
1-handful cilantro, chopped
1 teaspoon sesame seeds
1/4-teaspoon sea salt
2 tablespoons crumbled feta cheese
1/4-cup fresh chives, chopped

DIRECTIONS:
1.   Bring 8 cups of water to boil in a sauce-pan.
2.   Add edamame and peas; cook 3 minutes, drain.
3.   Combine oil, vinegar, onion, cucumber, carrot, cilantro, sesame seeds and salt in a bowl.
4.   Stir in edamame and peas.
5.   Sprinkle with feta and chives.
