AVOCADO SALAD WITH AVOCADO DRESSING ENJOY DAN:

AVOCADO SALAD WITH AVOCADO DRESSING by CHEF DAN:
Serves 4

INGREDIENTS:
1-1/2-avocados, pitted, and cubed
3-4 cups romaine lettuce, torn
1/2-onion, chopped
1-bell pepper, chopped
6 Symphony tomato ensemble, quartered, (from, Costco)
2 tablespoon fresh cilantro, chopped
3 radishes, thinly sliced
1/4-cup toasted pumpkin seeds

DIRECTIONS:
1.   Place all ingredients a salad bowl.
2.   Pour desired amount of dressing over the salad.
3.   Gently toss until evenly coated.
4.   Season with sea salt and freshly ground black pepper.
5.   Sprinkle with toasted pumpkin seeds.

 AVOCADO DRESSING:
1 cup buttermilk
1/2-cup low fat yogurt
1 avocado, pitted, and sliced
2 scallions, chopped
1 garlic clove, thinly sliced
1 tablespoon lime juice
1/2-teaspoon sugar
1/4-teaspoon dill weed
1/2-teaspoon sea salt

DIRECTIONS:
1.   Place all ingredients in a blender and pulse until smooth.
