CATFISH WITH CORNFLAKES AND PANKO ENJOY DAN:

CATFISH CRUSTED WITH CORNFLAKES AND PANKO by CHEF DAN:
Serves 4

INGREDIENTS:
1 cup cornflakes cereal
1 cup Panko (Japanese bread crumbs)
2 teaspoons fresh dill, chopped
11/8 teaspoon chipotle pepper
4 (4 Oz) catfish fillets, 1-inch thick
1/3-cup mayonnaise
Sea salt and freshly ground black pepper to taste

DIRECTIONS:       (PRE-HEAT OVEN TO 450 DEGREES)
1.   Spray a baking sheet with Pam.
2.   Combine cereal, Panko, chipotle pepper, salt and pepper in a bowl.
3.   Brush catfish with mayonnaise on all sides.
4.   Gently press catfish into cereal mixture, turning to coat on all sides.
5.   Transfer to the prepared baking dish.
6.   Bake in pre-heated oven for 10 minutes.
7.   Check for doneness after 6 minutes.
