TOMATO RICE AND ORZO by CHEF
DAN:

INGREDIENTS:
2-tablespoons
olive oil
1-tablespoon
butter
1-onion
finely chopped
1-pint
cherry tomatoes, halved
1-tablespoon
tomato paste
3-garlic
cloves, finely grated
1-cup
Arborio rice
3/4-cup
orzo
4-cups
Chicken stock
1-teaspoon
EACH thyme, & turmeric
2-tablespoon
lemon juice
1-1/2-teaspoon
salt
1/4-cup
feta cheese
DIRECTIONS:
1.
In
a saucepan bring chicken stock to a boil then reduce heat & simmer.
2.
Add
oil & butter to a skillet over medium-high heat & when sizzling.
3.
Add
onion, tomatoes, & ½- tablespoon salt, sauté stirring occasionally for 5
minutes.
4.
Add
tomato paste, cook until it starts to turn brown, about 1 minute.
5.
Stir
in garlic & sauté for 30 seconds.
6.
Add
rice, stirring constantly until grains are translucent 1-2 minutes.
7.
Remove
skillet from the heat, stir in orzo.
8.
Return
skillet to heat, & bring to a simmer, & cook stirring until liquid is mostly
absorbed about 1 minute.
9.
Stir
in heated chicken broth &1-teaspoon salt.

Bring
to a boil, reduce heat, stirring often until rice is al dente & creamy.

Turn
off the heat & stir in thyme, turmeric, & lemon juice.

Season
with salt & pepper.

Transfer
to serving bowls, & sprinkle with feta cheese.

Drizzle
with olive oil.
