MARI MISO MAPLE SALMON

INGREDIENTS:
2-lemons
2-limes
1/2-cup
white miso
2-tablespoons
EACH olive oil & pure maple syrup
1-teaspoon
mirin
1/4-teaspoon
freshly ground pepper
2-pound
skin-on salmon fillet
2
scallions, sliced
DIRECTIONS:
1.
position
rack in upper third of oven.
2.
Preheat
broiler to high.
3.
Line
a rimmed baking sheet with foil.
4.
Juice
1 lemon & 1 lime into a bowl.
5.
Whisk
in miso, oil syrup, mirin & pepper.
6.
Place
salmon skin-side down on prepared baking sheet.
7.
Spread
the miso mixture on the top.
8.
Halve
the remaining lemon & lime, arrange around the salmon.
9.
Broil
the salmon just until it flakes with a fork 7-12 minutes.

Serve
with lemon & lime wedges.

Sprinkle with sliced scallions.
