MASHED POTATOES MY
WAY by CHEF DAN:
Serves
8
INGREDIENTS:
5-pounds
potatoes, peeled & cubed
3-tablespoons
butter, divided
1-cup
Mexican sour cream
1-(8
Oz) package cream cheese softened
1-teaspoons
EACH salt, onion powder & garlic powder
1/2-teaspoon
freshly ground black pepper
DIRECTIONS:
(PREHEAT OVEN TO 350 F)
1.
Place
potatoes in a Dutch oven.
2.
Cover
with water & bring to a boil.
3.
Cook
until very tender, 25-30 minutes.
4.
Drain
well.
5.
Using
a ricer, rice potato into a bowl.
6.
Add
Mexican sour cream & next 5 ingredients + 2 tablespoons butter.
7.
Beat
until fluffy.
8.
Transfer
to a prepared 2-quart baking dish
9.
Dot
with remaining butter.

Bake
uncovered at 350 f for 20-25 minutes.
