AMARANTH GRAIN PORRIDGE ENJOY DAN:


                      AMARANTH GRAIN PORRIDGE by CHEF DAN:
Serves 4

INGREDIENTS:
1-cup Amaranth
2-cups Greek yogurt
1/4-cup Pure Maple Syrup
1/2-teaspoon vanilla extract
1/2-teaspoon salt
2-cup fresh berries
1/4-cup walnuts

DIRECTIONS:
1.   Heat a pan over medium-high.
2.   Add the amaranth 2 tablespoons at a time.
3.   The amaranth should begin to pop with 5 seconds of hitting the pan.
4.   Shake the gently, until the amaranth is popped, about 20 seconds.
5.   Transfer to a bowl & repeat process until you have 1 cup popped.
6.   In a bowl, whisk together the yogurt, vanilla, maple syrup & salt.
7.   In a serving dish, layer the berries, yogurt mixture, & popped amaranth
8.   Repeating until you reach the top.
9.   Top with walnuts.
