BILLICKS VAMPIRE MARTINI ENJOY DAN:


                          BILLICKS VAMPIRE MARTINI by CHEF DAN:
8 Servings

INGREDIENTS:
1-serrano pepper, seeded & quartered
2-garlic cloves, smashed
1-(2-inch) lemon strip
1-1/2-cups vodka
ice
Garnish with baby pickled beet (recipe to follow)

DIRECTIONS:
1.   Place the pepper, garlic, lemon peel & vodka in a large glass container.
2.   Cover & let stand for 1 week.
3.   For each serving, fill a shaker 3/4-full of ice.
4.   Add 1-1/2-ounces infused vodka to shaker.
5.   Cover & shake until condensation forms on the outside of shaker.
6.   About 10-15 seconds,
7.   Strain into chilled martini glass.
8.   Garnish with pickled beet.

PICKLED BEETS.
3/4-cup distilled white vinegar
3/4-cup water
3/4-cup sugar
1-tablespoon coarse salt
1-tablespoon whole black peppercorns
10 juniper berries
2-bunches baby beets, (8 or 10 peeled)

DIRECTIONS:
1.   Combine al ingredients, except beets, in saucepan.
2.   Stir until sugar is dissolved.
3.   Add beets & bring to a boil: reduce heat & simmer for 25-30 minutes.
4.   Stirring occasionally.
5.   Remove from heat.
6.   Transfer to a heatproof container; keep beets submerged.
