BLACK BEAN MEATLOAF by
CHEF DAN:
1-meatloaf
INGREDIENTS:
1-pound
SISTER’S ground beef (FROM WHIDBEY ISLAND)
1-(16
Oz) can refried beans
1-(15
oz) can black beans, (drained & rinsed)
1-onion,
chopped
1-carrot,
shredded
1-bell
pepper, finely diced
8-cremini
mushrooms sliced
3-garlic
cloves, minced
1-teaspoon
EACH chili powder, cumin, dried oregano & Colombo seasoning
1/2-cup
EACH sweet corn, Salsa & Panko
1/4-water cup
craisins
1-egg
1/4-cup
if needed
1/2-cup
(shredded Mexican cheese blend)
DIRECTIONS:
(PREHEAT OVEN TO 350 F)
1.
Lightly
grease a 10-X-5-1/2 loaf pan.
2.
in
a large bowl, combine ground beef, and next 16 ingredients.
3.
Gently
mix to combine thoroughly.
4.
Don’t
kneed to much or you might lose the texture.
5.
Place
in the loaf pan & bake for 1-hour & 15 minutes.
6.
Cover
with Salsa 5 minutes before it is done.
7.
Internal
temperate should be 160 F,
8.
Let
rest 10 minutes before slicing.
