BAGEL FACTORY GOCHUJANG BAGELS ENJOY DAN:


                       BAGEL FACTORY GOCHUJANG BAGELS:
serves 6                        (OWNER JOHN AUBURN)

INGREDIENTS:
1-pound Prime Boneless Fresh Pork Loin
6-Bagel Factory bagels

QUICK PICKLED CUCUMBERS:
1/2-cucumber, very thinly sliced
1/4-Walla Walla sweet onion, very thinly sliced
1/2-cup rice vinegar
1/3-cup sugar, or honey or pure Maple syrup
1-teaspoon red chili flakes

GOCHUJANG BBQ. SAUCE:
2-tablespoon Gochujang
1-cup BBQ. sauce

QUICK PICKLE:
1.   Toss the cucumbers & onions in a mixing bowl.
2.   Add red Chile flakes.
3.   whisk the sugar into the rice wine until dissolved.
4.   Pour over cucumber mixture to fully coat: chill until ready to eat.

GOCHUJANG BBQ. SAUCE.
1.   Combine the BBQ. sauce & Gochujang sauce in a mixing bowl.
2.   Whisk together until fully combined.

SANDWICHES:
1.   Reserve half to the prepared Gochujang BBQ. sauce.
2.   Thinly slice the Pork Loin into 1/4-inch medallions.
3.   Heat a cast iron skillet over medium-high heat.
4.   Brush the loin with the Gochujang BBQ. sauce, sear 2-3 minutes each side or until fully cooked
5.   Repeat with all the medallions are fully cooked, cover & keep warm.
6.   Lightly toast the bagels
7.   Place a layer of pickled cucumber and onions on the bottom.
8.   Add a layer off pork medallions, then top pickled mixture.
9.   Add the reserved Gochujang BBQ. sauce to each Bagel & top with the other half of the bagel.
