SHEET PAN CHICKEN FAJITAS

INGREDIENTS:
1-pound
boneless, skinless, chicken breasts
2-tablespoon
olive oil
3-bell
peppers, cut into 1/2-inch strips
2-teaspoon
chili powder
1-teaspoon
EACH cumin, garlic powder, turmeric & salt
1/2-teaspoon
EACH ground black pepper, paprika, coriander powder
1/-8-teaspoon
cayenne pepper
1-tablespoon
lime juice
8
warm tortillas
Garnish:
Shredded
cheese, Mexican sour cream or avocado
DIRECTIONS-(PREHEAT
OVEN TO 400 F)
1.
Place
a baking sheet in the oven while it is warming up.
2.
In
a large bowl toss 1-tablespoon oil with the bell peppers and onions.
3.
Carefully
remove baking sheet from the oven.
4.
Spread
the peppers and onions evenly across the sheet.
5.
Place
in oven and bake for 9 minutes.
6.
In
the same bowl, combine remaining oil along with the chicken and spices + salt
and pepper.
7.
Remove
sheet from the oven and spiced chicken +fajitas.
8.
Make
sure chicken pieces are separated.
9.
Bake
for about 20 minutes, or until vegetables are roasted and fajitas are golden brown.

Remove
from oven and squeeze lime juice over the top.

Serve with garnish of your choice.
