OVEN ROASTED TOFU by
CHEF DAN:
Serves

INGREDIENTS:
1/2-red
onion, thinly sliced
2
tablespoons olive oil
2
tablespoon rice vinegar
3-tablespoon
soy sauce
2-teaspoons
EACH coriander, turmeric and paprika
1/2-teaspoon
EACH red pepper flakes, cinnamon, and rosemary
Salt
& pepper to taste
1/2-cup
yogurt
4
pitas warmed
2-cucumbers,
thinly slice lengthwise
DIRECTIONS:
(PREHEAT OVEN TO 425 F)
1.
Place
prepared baking sheet in the oven as you preheat.
2.
Toss
onion and vinegar in a bowl, and next 8 ingredients + salt.
3.
Stir
to coat.
4.
Set
tofu in paper towels and wrap tightly and set in strainer.
5.
Takes
about 20-30 minutes.
6.
Remove
and cut into 1/2-inch cubes.
7.
Arrange
on a single layer on the prepared baking sheet.
8.
Roast
tofu, turning once or twice, or until crispy, 20-25 minute.
9.
Stir
yogurt and garlic into a bowl, season with salt & pepper.

Assemble
by dividing yogurt among warmed pitas.

Top
with cucumber, and drained pickled onions.
