INSTANT POT LEBANESE MUJADARA by

INGREDIENTS:
1-cup
brown rice
2-tsblespoon
olive oil
1-red
onion, thinly sliced
4-garlic
cloves, roughly chopped
3-teaspoons
cumin
1/2-teaspoon
EACH cinnamon, turmeric, ground ginger and cayenne
1-teaspoon
EACH dried mint, allspice, coriander, Kosher salt
1-tablespoon
lemon juice
3-1/2-cups
bone broth
1-cup
Basmati rice, rinsed
GARNISHES;
Olive
oil, tomatoes, fresh mint, yogurt, or zhoug, or tahini sauce, avocado, shredded
cabbage or carrots.
DIRECTIONS:
1.
Place
lentil in a bowl and cover with boiling water.
2.
Let
them soak until ready for Instant Pot.
3.
Set
Instant Pot to SAUTE function.
4.
When
hot sign comes on add onion, and sauté for 5 minutes.
5.
Remove
half and reserve for topping.
6.
Add
garlic and sauté for 1 minute.
7.
Add
all he spices salt lemon juice, and broth.
8.
Stir.
9.
Drain
the lentils and add them along with rinsed rice to the I.P.

Cover
the I. P. and press PRESSURE COOK button.

Cook
on high for 14 minutes.

Let
pressure release naturally for at least 10 minutes.

Gently
fluff Mujadara with a fork and serve with favorite garnish.
