CHEF JEFF’S SONORAN HOT
DOGS by CHEF DAN:
Serves

INGREDIENTS:
4
all-beef hot dogs
4
slices bacon
4
bolillo rolls, split lengthwise (almost but not quite all the way to ends)
2
tablespoon olive oil
1-onion
cut into 1/2-inch rounds
4
banana peppers,
1
jalapeno chili stemmed and halved lengthwise
4
banana peppers
2
garlic cloves smashed
1
cup loosely packed cilantro leaves and tender stems
2
tablespoon lime juice
1-cup
black beans, drained and heated through
1
cup shredded Mexican cheese
1-cup
chopped tomatoes
1/4-cup
EACH yellow mustard and mayonnaise (mixed together)
DIRECTIONS:
(PREHEAT GRILL TO 400 F)
1.
Heat
a grill to medium-heat
2.
Toss
1/2 of the onion rounds, jalapeños, banana peppers with 1 tablespoon oil.
3.
Grill
until tender and charred, about 5 minutes each side.
4.
In
a food processor pulse onion, and next 4 ingredients + splash of salt, and
remaining oil.
5.
Process
until smooth.
6.
Set
aside.
7.
Wrap
the bacon around the hot dog and grill on medium-heat turning occasionally until
crispy about 12 minutes.
8.
Grill
rolls cut side down until lightly toasted.
9.
Fill
rolls with beans and hot dogs, then top remaining onions, mustard mixture,
cheese, and banana peppers.
