SQUID
SALAD WITH SPICY LIME DRESSING by CHEF DAN:
Serves
4
INGREDIENTS:
1-1/2-pounds cleaned squid, (tubes and tentacles)
1-1/2-pounds cleaned squid, (tubes and tentacles)
5
cups water
3-4
lettuce leaves
1
green apple
1/2-onion,
cut into thin rings
6
cherry tomatoes, halved
2
teaspoon EACH smoked paprika, and oregano
2
tablespoon lemon juice
1-green
chili, seeded and sliced
Fresh bunch cilantro leaves
1/4-cup
dry roasted peanuts
GINGER
LIME DRESSING:
1/4-cup
lime juice
1
teaspoon Sriracha chili sauce
1
thumb-size fresh ginger peeled and grated
2
teaspoon EACH fish sauce, brown sugar and tamarind paste
Splash
of black pepper
DIRECTIONS:
1.
Combine
the ingredients for the lime dressing, and then set aside.
2.
Prepare
the fruit, vegetables, and spices and herbs, lettuce leaves, and arrange on a
salad plate.
3.
In
a pot, bring the water to a boil, then drop in the squid for a quick blanch,
about 30 seconds.
4.
Place
in ice water to stop cooking.
5.
Drain
and add to the squid to the salad.
6.
Drizzle
with ginger lime-dressing, lightly too everything together.
7.
Garnish
with cilantro and dry roasted peanuts.
