EASY
CRAB OMELET FOR BERDENE’S BIRTHDAY by CHEF DAN:
Serves

INGREDIENTS:
2
tablespoons butter
1/2-cup
crimini mushrooms, sliced
4
eggs separated
2
tablespoons milk
1
cup crab meat
1
cup shredded parmesan cheese
1
teaspoon tarragon
1/2-teaspoon
Old Bay seasoning
Garnish
with smoked paprika and fresh snipped chives
DIRECTIONS:
1.
Melt
butter in skillet over medium-high heat when sizzling.
2.
Stir
in mushrooms and sauté until tender about 5 minutes.
3.
Remove
with slotted spoon, transfer to a plate.
4.
Remove
skillet from heat.
5.
In
a bowl, beat egg yolks, milk, tarragon, Old Bay to blend.
6.
In
another bowl, beat egg whites until soft peaks form.
7.
Fold
yolks mixture into whites.
8.
Return
skillet to medium-high heat, when butter is sizzling.
9.
Pour
egg mixture into the skillet.
10.
Sprinkle
mushroom, crab meat evenly over the top.
11.
Cook
until omelet begins to set about 3 minutes.
12.
Sprinkle
with cheese.
13.
Using
a spatula, fold omelet over, forming semicircle.
14.
Cover
skillet until omelet puffs and is cooked through, 3 minutes.
15.
Slide
omelet onto a plate.
16.
Garnish
with smoked paprika and fresh snipped chives.
