HOLLANDAISE SAAUCE WITH EGGS IN THE BUSH MY WAY ENJOY DAN:

HOLLANDAISE SAUCE WITH EGGS IN THE BUSH MY WAY by CHEF DAN:
Serves 6

INGREDIENTS:
3 egg yolks
1/4-teaspoon Dijon mustard
1 tablespoon lemon juice
1 dash cayenne pepper pinch of black pepper
1/2-cup butter.

DIRECTIONS:
1.   In a blender. Combine egg yolks, Dijon mustard, lemon juice,
Cayenne pepper and black pepper.
2.   Cover and blend for about 5-7 seconds.
3.   Place the butter in a glass measuring cup.
4.   Heat into the microwave for about 1 minute or until melted.
5.   Set the blender on high speed, and pour the butter into the yolk mixture in a steady thin stream.
6.   It should thicken almost immediately.
7.   Pour over egg in the bush.
