HEALTHY MUFFINS WITH HEMP, FRUIT AND NUTS ENJOY DAN:

INGREDIENTS:
Cooking
stray or muffin liners
1-1/2-cup
wheat bran
1/2-cup
all-purpose flour
1
cup old fashion oats
2
tablespoons protein powder
1/2-cup
brown sugar
1
teaspoons EACH baking soda, and baking powder
1/4-teaspoon
sea salt
1
teaspoon EACH cinnamon, and allspice
1
cup buttermilk
1
ripe banana, mashed
1
egg
2
teaspoon pure vanilla
1
cup dates, pitted and chopped
1/2-cup
walnuts
1/3-cup
EACH chopped dried apricots, dried cranberries and crisins
3
tablespoons EACH ground flax seeds, and hemp seeds
2
tablespoon sugar
DIRECTIONS: (PREHEAT OVEN TO 400 DEGREES)
1.
Combine
wheat bran, flour, oats, protein powder, brown sugar, baking soda, baking
powder, salt, cinnamon and allspice in a bowl.
2.
Stir
with a whisk, making a well in the center of mixture.
3.
Combine
buttermilk, banana, egg, and vanilla; add to flour mixture.
4.
Stirring
until just moist.
5.
Fold
in dates, apricots, dried cranberries, crisins, and walnuts.
6.
Spoon
batter into prepared muffins cups.
7.
Combine
flax seeds, hemp seeds and sugar.
8.
Sprinkle
evenly with mixture.
9.
Bake
in preheated oven for 18-20 minutes or until muffing spring back when touched lightly
in the center.
