QUINOA LENDTIL SALAD WITH YOGURT DRESSING by CHEF DAN:
Serves
4
INGREDIENTS:
1
cup quinoa
2
cups water or chicken broth
1
cup cooked red lentils
6
cherry tomatoes, halved
1
(15.5 Oz) can black beans, drained and washed
2
scallions cut on the bias
1
handful fresh mint, chopped
1
handful fresh oregano, chopped
YOGURT
DRESSING:
2
tablespoons olive oil
1/2-cup
yogurt
1/4-cup
red wine vinegar
1 teaspoon EACH
cumin, Turkish oregano and green zaatar
Sea salt to taste
DIRECTIONS;
1.
Bring
quinoa salted water to a boil in saucepan.
2.
Reduce
heat to medium-low, cover and simmer for about 15 minutes.
3.
Set
aside.
4.
Whisk
all yogurt dressing ingredients together in a bowl.
5.
Combine
cooked quinoa, cooked lentils tomatoes, black beans and scallions.
6.
Pour
dressing over quinoa mixture; toss to coat.
7.
Stir
in mint and oregano, season with salt and pepper to taste.
