BOURBON WHISKEY SAUCE by CHEF
DAN:
Makes
2 cups
INGREDIENTS:
1/2-onion
finely sliced
4
garlic cloves
3/4-cup
whiskey
1
cup ketchup
1/4-cup
tomatoes paste
1/2-cup
cider vinegar
2
teaspoons liquid smoke
1/4-cup
dark molasses
3
teaspoon chili powder
3
teaspoons green chili powder
2
teaspoon cumin
1-1/2-
teaspoon smoked paprika
1
teaspoon ground mustard
1
tablespoon soy sauce
Kosher
salt and black pepper to taste
INGREDIENTS:
1.
In
a skillet of medium-heat, combine the onion, garlic and whiskey.
2.
Simmer
for low-heat for 5 minutes.
3.
Combine
all remaining ingredients and add to the sauce pan and simmer for 10 more
minutes.
4.
Bottle
and refrigerate up to 1 month.
