ORZO
WITH MUSHROOMS AND SWISS CHARD by CHEF DAN:
Serves
4-6
INGREDIENTS:
1
pound TRADER JOES orzo
3
tablespoons butter
1-1/2-pounds
baby portabella mushrooms
1
onions, diced
12
ounces fresh Swiss chard, stems removed and thinly sliced
2
tablespoons corn-starch
3
cups chicken stock
1
teaspoon salt
1/4-teaspoon
white pepper
1/8-teaspoon
nutmeg
DIRECTIONS:
1.
Cook
orzo to the package directions.
2.
Set
aside.
3.
Melt
2 tablespoons butter in a skillet over medium-heat.
4.
Add
mushrooms and onions, stirring occasionally for 12 minutes.
5.
Add
Swiss chard, stirring until wilted about 3 minutes.
6.
Mix
together cornstarch with 1/3-cup chicken stock.
7.
Meanwhile
in the drained pots add 2 tablespoons butter, cornstarch mixture cook 2
minutes.
8.
Pour
in the remaining chicken stock, stirring constantly.
9.
Bring
to a simmer and simmer for 7-8 minutes.
10.
Stir
in salt, pepper and nutmeg.
11.
Stir
in mushroom Swiss chard mixture and orzo.
12.
Simmer
for 2-3 minutes.
