SALMON AND ROASTED POTATOES WITH SABRINA ENJOY DAN:

SABRINA’S BAKED SALMON RECIPE AND DAN’S ROASTED POTATOES
                                                                      By CHEF DAN AND SABINA:
SERVE 6-8
3-4 pound salmon
2 tablespoons olive oil
2 tablespoons butter
8-10 springs dill
Lemon juice of one lemon

DIRECTIONS:    (PRE-HEAT OVEN TO 350 DEGREES)
1.   Melt butter, add olive oil, lemon juice, and salt and pepper to taste.
2.   Coat salmon, with butter olive oil mix.
3.   Cover salmon with fresh dill.
4.   In a preheated oven bake salmon for 15-20 minutes, until internal temperature is 145 degrees.

ROASTED POTATOES:
1-1/2-pounds red potatoes, cut into large dice
1/4-cup olive oil
1/2- Teaspoon EACH garlic powder, Smokey paprika, salt and black pepper
1 (1 Oz) envelope dry onion soup mix
1/4-cup parmesan cheese
2-3 springs fresh rosemary

DIRECTIONS:         (PRE-HEAT OVEN TO 400 DEGREES)
1.   Combine all ingredients in a bowl and combine thoroughly.
2.   in a pre-heated oven in a greased baking dish add all ingredients.
3.   Cover and bake for 40 minutes.
4.   Uncover and bake 12-minutes more or until nice and crispy.
