QUICHE
FOR THE LADIES AT THE SOUP KITCHEN by CHEF DAN:
Serves
8-10
INGREDIENTS:
1
(9-inch) unbaked deep dish pie crust
5
eggs, beaten
2
cups milk
1
cup salsa
1/2-
red bell pepper, chopped
1/2-
onion, chopped
1
(16 Oz) package of jalapeno cheese
1
pound sausage
2
tablespoons taco seasoning
Garnish
with fresh basil
DIRECTIONS: (PRE-HEAT OVEN TO 400 DEGREES)
1.
Whisk
together the eggs, milk, salsa, bell pepper, onion, and cheese.
2.
Season
with salt and pepper.
3.
In
a skillet over medium-high heat and stir in the sausage.
4.
Stir
and cook for 10 minutes.
5.
Drain
discard any excess grease.
6.
Stir
in taco seasoning.
7.
Spread
the mixture into the pie crust.
8.
Pour
the egg mixture over the sausage.
9.
Bake
for 45 minutes to 1-hour.
10.
Garnish
with fresh basil
