ORZO WITH FETA AND OLIVES ENJOY DAN:

        ORZO SALAD WITH FETA CHEESE AND OLIVES by CHEF DAN:
Serves 10

INGREDIENTS:
2 cups uncooked orzo
1 pint cherry tomatoes, halved
1/2-cup feta cheese
1/4-cup Authentic Greek Kalamata olives
1 red onion, chopped
1/4-cup toasted pine nuts
2 tablespoons capers

LEMON DRESSING:
1/4- lemon juice
1 teaspoon DAN’S honey
2 garlic cloves, chopped
1/4-cup olive oil
3/4-teaspoon dried oregano
1 teaspoon lemon pepper
Sea salt and freshly ground pepper to taste

DIRECTIONS:
1.   Cook orzo in salted water, and cook according to package directions:
2.   Drain and set aside.

LEMON DRESSING:
1.   In a bowl combine all ingredients in a food processor except oil,
2.   While pulsing, drizzle in olive oil.

3.   Combine tomatoes, feta cheese, kalamata olives, parsley, and capers.
4.   Add drained orzo.
5.   Season with salt and pepper to taste.
6.   Just before serving add lemon dressing.
7.   Top with toasted pine nuts.
