TOMATOES PASTA AND VODKA ENJOY DAN:


                        TOMATOES ZITI ALLA VODKA by CHEF DAN:
Serves 4-6

INGREDIENTS:
1 pound ziti, penne or any tubular pasta
2 tablespoon olive oil
1 (6 Oz) package Canadian bacon, diced
4 garlic cloves, minced
1 onion, chopped
1 (15 Oz) can diced tomatoes
1 (14 Oz) can tomatoes puree
1 cup vodka
1 cup coconut milk
2 teaspoons sugar
3/4-cup fresh basil
1 cup fresh mozzarella cheese
Kosher salt and freshly ground black pepper to taste.

DIRECTIONS:       

1.   Cook ziti according to package directions, drain and reserve 1 cup of liquid.
2.   In a skillet over medium-heat add olive oil.
3.   When oil is hot add Canadian bacon and brown on both sides.
4.   Remove and set aside.
5.   Add garlic and onion and sauté for 4-5 minutes.
6.   Stir in diced tomatoes and puree, vodka, basil, sugar, salt and pepper.
7.   Bring to a simmer and simmer for 8 minutes.
8.   Pour in vodka and simmer for 2 minutes
9.   Add Canadian bacon back to the skillet along with the coconut milk
10.                Add cooked pasta and use reserved water if sauce is too thick.
11.                Toss to combine, and heat through.
12.                Stir in mozzarella cheese
13.                Top with fresh basil.
