SWEET POTATO FRIES WITH ROSTED GARLIC by CHEF DAN:
Serves 4
INGREDIENTS:
1 garlic bulb, roasted, directions below
1-1/2-sweet potatoes peeled and sliced in 1/4-inch long slices and then 1/4-inch wide strips.
1/2-teaspoon sea salt1/4-teaspoon black pepper
2 tablespoon olive oil
1-1/2-teaspoons of chili powder
1 –teaspoon cumin
DIRECTIONS: (HEAT OVEN TO 450-DEGREES)
1. Cover a baking sheet with aluminum foil.
2. Remove garlic from oven and let cool
3. In a bowl squeeze out the creamy garlic and mix with all the other ingredients and mix thoroughly.
4. Place potatoes on the baking sheet in a single layer, making sure they are not touching.
5. Bake for 25-30 minutes, turning once
GARLIC: (PRE-HEAT OVEN TO 400-DEGREES)
1. 1 garlic bulb
2. 1 teaspoon olive oil
3. Salt and pepper to taste
DIRECTIONS:
1. Cut of the top 1/4-inch of the garlic bulb, have all the cloves exposed.
2. Drizzle garlic with 1 teaspoon of olive oil and season with salt and pepper.
3. Wrap the entire bulb in a piece of foil and place on a baking sheet.
4. In pre-heated oven roast for about 45-60 minutes or until garlic is golden brown and nice and creamy.
