ASIAN CHICKEN SALAD WITH RAMEN NOODLES by CHEF DAN:
Serves20-30
INGREDIENTS:
6 cups chopped, cooked chicken breasts
3 heads of cabbage, shredded or chopped
6 packages of toasted Top Ramen noodles
3 tablespoons butter
1/2-cup slivered almonds
1/4-cup sesame seeds
DRESSING
3/4- Cup grape-seed oil
1- Cup rice vinegar
1/3-cup white sugar
1/4-cup soy sauce
1 tablespoon each of salt and pepper
DIRECTIONS:
1. Prepare dressing and set aside.
2. Crush noodles, place them in a skillet and brown in butter over medium-heat.
3. Add slivered almonds, and sesame seeds, stirring often to prevent burning.
4. Remove from heat and set aside.
5. Add seasoning mix from noodles and let cool
6. Combine cabbage, cooked chicken, and toasted Roman noodles and seeds.
7. Stir well.
8. Pour over salad, toss and serve.
