MOLASSES by CHEF DAN:
LEMON-DIJON GLAZE:
2 tablespoons molasses
2 tablespoons stone-ground Dijon mustard
2 tablespoons lemon or lime juice
2 garlic cloves, minced
Whisk all ingredients together.
Brush on chicken, pork, beef or lamb.
MOLASSES-SOY MARINADE:
2 tablespoons molasses
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
2 garlic cloves, minced
1 thumb size fresh ginger, graded
Whisk all ingredients together.
Marinade fish, chicken, pork, beef or lamb up to 4 hours or all-night.
