RED CABBAGE SALAD WITH APPLES by CHEF DAN:
Serves 4
INGREDIENTS:
1/2-head red cabbage, cored and shredded
2 tart apples, peeled, cored and sliced
1 onion, chopped
1 tablespoons olive oil
3 tablespoons (vinaigre de vin) white wine vinegar
2 tablespoons white sugar
2 tablespoons water
Sea salt and freshly ground black pepper to taste
DIRECTIONS:
1. In a sauce pan heat oil until sizzling.
2. Add cabbage and onion, sauté until welted.
3. Stir in apple and water, salt and pepper.
4. Cover and simmer for about 25 minutes.
5. Pour vinegar and sugar into the mixture.
6. Cook another 54-6 minutes.
