ROASTED PEARS WITH AGED BLASLMIC VINEGAR ENJOY DAN:


          ROASTED PEARS WITH AGED BALSAMIC VINEGAR by CHEF DAN:
Serves 4

INGREDIENTS:
4-slightly under ripe pears
2-teaspoons butter
2-tablespoons aged balsamic vinegar
4-tablespoon goat cheese
2-tablespoons honey
freshly ground black pepper

DIRECTIONS: (PREHEAT OVEN TO 400 F)
1.   Put butter in a baking dish & place in the oven for 2 minutes.
2.   Arrange pears cut-side down, in a single layer.
3.   Roast for 30 minutes.
4.   Pour vinegar over pears & roast 7 minutes more.
5.   Transfer pears to a serving dish, cut side up.
6.   Spoon juices over pears from baking dish.
7.   Arrange cheese on & around pears.
8.   Drizzle pears & cheese with honey.
9.   Grind fresh black pepper over the top of pears & cheese.
