IRISH STEW ENJOY DAN:


                                      IRISH STEW BY CHEF DAN:
Serves 4-6

INGREDIENTS:
2-pounds best end of neck of Mutton Chops
2-pounds peeled potatoes, halved
1-pound onions, sliced
1-pint water
salt & pepper
A spring of parsley

DIRECTIONS:
1.   Blanch & rinse the lamb, trimming excess fat.
2.   Layer the slice onions, the mutton or lamb, & the potatoes in a heavy saucepan.
3.   Add the water, salt, pepper, & thyme.
4.   Bring to a boil, cover & simmer for 1 hour.
5.   topping with extra halved potatoes if desired.
6.   Serve sprinkle with chopped parsley.
