KARTOFFELPUFFER GERMAN POTATO SALAD ENJOY DAN:


    KARTOFFELPUFFER GERMAN POTATO PANCAKES by CHEF DAN:
4 pancakes

INGREDIENTS:
1-pound potatoes
1/2-onion
1/4-teaspoon EACH garlic powder, & nutmeg
1/2-teaspoon salt
1/4-teaspoon freshly ground black pepper
2-eggs
4 tablespoons vegetable oil (for frying)
applesauce or Pure Maple Syrup

DIRECTIONS:
1.   Wash peel & grate the potatoes.
2.   Place the grated potatoes in a clean dishcloth or cheese cloth & squeeze as mush liquid as you can into a bowl.
3.   Let liquid stand for a few minutes, then carefully drain.
4.   Leaving potato starch at the bottom of the bowl.
5.   Add potato back to the starch.
6.   Grate the onion over the potatoes.
7.   Add salt, pepper, garlic powder, nutmeg & eggs.
8.   Mix thoroughly.
9.   Heat oil about 1/8-inch in a skillet over medium-high when sizzling.
10  Drop 1/2-cup potato mixture into the hot oil & flatten with the back of a spoon.
11  Fry 4-5 minutes on each side, or until golden brown.
12  Drain on paper towels & serve hot with applesauce or Maple syrup or maybe sour cream.
