LOW COUNTRY SEAFOOD BIOL IN PACKETS ENJOY DAN:

LOW COUNTRY SEAFOOD BOIL IN PACKETS by CHEF DAN:
 Make 8 packets

INGREDIENTS:
1.   4 small red potatoes, sliced 1/4-inch thick
2.   1-pound kielbasa sausage, cut into 1/4-inch pieces
3.   32 shrimp, deveined but shells left on
4.   8 ears of corn, cut into small wheels
5.   32 Penn Cove mussels in shell, scrubbed
6.   1 lemon thinly sliced
7.   4 scallions, thinly sliced
8.   2 teaspoon Old Bay
9.   1 tablespoon butter

DIRECTIONS:
1.   Pre-heat outdoor grill, and lightly oil the grates.
2.   In the center of two pieces 12-X-17 of foil.
3.   In a bowl season shrimp with Old Bay, stir to combine.
4.   Place 15 sliced potatoes on the foil, top with sausage, then stack on shrimp, add 4 wheels of corn.
5.   Place Penn Cove mussels around the edge.
6.   Top with 2 lemon slices, butter, and sprinkle on some scallions.
7.   Seal tightly but leave enough room for the steam.
8.   Place on grill and cook for 15 minutes.
