BRATS AND SAUERKRAUT FOR A POT-LUCK ENJOY DAN:

MARJORY'S B S CROSBY DAYS POT LUCK BRATS WITH SAUERKRAUT 
                                                                                             By CHEF DAN:
Serves 16-20

INGREDIENTS:
1-(24 Oz) jar sauerkraut
1 2-pound package of brats
2 tablespoons olive oil
4 cup chicken broth
1 (16 Oz) bottle of IPA beer
1 box sliced mushrooms
1 (18 Oz) can cream of mushrooms soup
4 Yukon gold potatoes, cut into small cubes
4 carrots, chopped 1 onion, chopped
4 celery ribs, chopped
1/4-cup apple vinegar
2 bay leaves
2 tablespoons toasted dill seeds
1 tablespoon toasted caraway seeds
1 tablespoon smoky paprika
Sea salt and freshly ground black pepper to taste

DIRECTIONS:
1.   In a stock-pot cook brats and onions in hot oil and sauté 5 minutes.
2.   Stir in carrots, mushrooms, and celery and sauté 4 minutes.
3.   Add broth, beer, sauerkraut, potatoes, cream of mushrooms soup, vinegar, toasted seeds, paprika, and bay leaves.
4.   Bring to a boil.
5.   Cover reduce heat and simmer for 1-1/2-hours.
6.   Remove bay leaves and serve.
7.   Season with salt and pepper.
