CUCUMBERS FOR 20 OR MORE ENJOY DAN:


        CUCUMBER SALAD FOR THE SOUP KITCHEN by CHEF DAN:

Serves 20

 

INGREDIENTS:

20 cucumbers

2 red onion, thinly sliced

5 teaspoons sugar

1-1/2-cup rice wine vinegar

1/2-cup vegetable oil

2-1/2-teaspoon salt

Pinch of pepper

5 teaspoons dill weed seeds, ground

A pinch of red pepper flakes, optional

Garnish with sesame seeds

 

DIRECTIONS:

1.   Mix onions, sugar, vinegar, oil, salt, pepper and dill in a serving bowl

2.   Peel cucumbers, if desired, then thinly slice and add to the bowl.

3.   Stirring to mix and coat.

4.   Garnish with sesame seeds.

5.   Let marinate in the refrigerator for a couple of hours.
