SWEET POTATOE FRIES ENJOY DAN:

CRISPY BAKED SWEET POTATOE FRIES by CHEF DAN:
Serves 3-5

INGREDIENTS:
Olive oil for tossing
3 sweet potatoes peeled and sliced into 1/4-inch long slices, then 1/4-inch wide stripes.
1 tablespoon corn starch
1/2-teaspoon (EACH) ground cumin, chilies powder, smokey paprika, garlic powder, coarse salt, and black pepper.

DIRECTIONS:    (PRE-HEAT OVEN TO 450 DEGREES)
1.   Spray a cookie sheet with cooking spray.
2.   Toss the fries in a zip-lock bag add uncooked fries and all spice including starch and olive oil.
3.   Mix and shake to distribute evenly,
4.   Place potatoes on a cookie sheet lined with aluminum foil.
5.   In a pre-heated oven place potatoes on cookie sheet, arranging in single file.
6.   Bake 15 minutes and thin flip so that they cook on all sides.
7.   Bake for 15 minute more or until fries are crispy.
