SAUSAGE STUFFED JALAPENOS WITH 2 CHEESES ENJOY DAN:

JALAPENOS STUFFED WITH SAUSAGE AND CHEESE by CHEF DAN:
Makes 24

INGREDIENTS:
8 ounces, softened mascarpone
12 jalapenos, halved lengthwise, seed removed
1 pound bulk spicy sausage
1/4-cup red bell pepper, small dice
3 garlic cloves, small diced
1/4-cup red onion, small diced
1 cup grated Mexican style cheese blend
1 teaspoon (EACH) ground cumin, cayenne pepper, chipotle powder, garlic powder, smoked paprika, hot Chinese mustard powder, cilantro, and brown sugar.
1 tablespoon olive oil
2 tablespoon lime juice
1/2-cup shredded mozzarella cheese
Kosher salt and freshly ground black pepper

DIRECTIONS:      (HEAT OVEN TO 350 DEGREES)
1.   Spray a baking sheet with pam.
2.   Place jalapenos on the baking sheet and roast for 10 minutes.
3.   Heat oil in skillet over medium-heat.
4.   Add sausage and cook for 5-7 minutes.
5.   Add onion, peppers, and garlic and sauté for 5 minutes.
6.   Remove and cool to room temperature.
7.   In a bowl stir together, mascarpone,  cheese blend, cumin, cayenne, chipotle, garlic powder, smoked paprika, mustard powder, cilantro, brown sugar, lime juice, and season with salt and pepper.
8.   Add sausage mixture to the bowl of mascarpone mixture.
9.   Spoon 1 tablespoon of the mixture into each jalapeno half, and top with 1/2-teaspoon mozzarella cheese.
10.                Place on a baking sheet and bake for 15-20 minutes.
