FRESH SPINACH WITH BACON AND FETA ENJOY DAN:

SPINACH SALAD WITH CANADIAN BACON FROM LORI’S GARDEN
                                                                                                 By CHEF DAN:
Serves 2

INGREDIENTS:
1 tablespoon olive oil
1 big bunch fresh spinach from sally’s garden
2 tablespoons lemon juice
2 garlic cloves, small dice
4 pieces Canadian bacon, small dice
1/4-cup chicken broth
2 tablespoon feta cheese
A pinch of salt

DIRECTIONS:
1.   Heat oil lemon juice and bacon in a sauce pan over medium-heat.
2.   Cook and stir for 4-5 minutes until bacon is crunchy.
3.   Remove from pan, and place on dish.
4.   Toss spinach until it wilts, add some chicken stock.
5.    Keep adding more spinach until it has all wilted, add more stock if needed.
6.   Through the bacon back into the spinach and stir to combine.
7.   Add feta and serve.
