BEEF STEW THAI STYLE IN THE CROCK POT ENJOY DAN:

THAI CURRIED BEEF STEW MEAT IN THE CROCK POT by CHEF DAN:
Serves 8-10

INGREDIENTS:
2 tablespoon olive oil
3 pounds beef stew meat
1 onions, chopped
2 garlic cloves, minced
1 tablespoon red curry paste
3 new potatoes cut into chunks
3 carrots cut into chunks
1 (19 Oz) can MAE PLOY) coconut milk
3 tablespoon fish sauce
1 tablespoon brown sugar
2 tablespoon tamarind
2 tablespoon hoisin sauce
1/4-cup creamy peanut butter
2 tablespoon lime juice
1 tablespoon soy sauce
Garnish with dry roasted peanuts and a handful of cilantro

DIRECTIONS:
1.   In a skillet, heat oil over medium-high heat add red curry paste and when bubbling.
2.   Add stew meat and brown on all sides.
3.   Add onions, garlic, and sauté for 5 minutes.
4.   Add potatoes, carrots, coconut milk, fish sauce, brown sugar, tamarind, hoisin sauce, peanut butter, lime juice and soy sauce.
5.   Stir well and bring to a boil.
6.   Put stew in the crock pot, cover and cook on high for 5 hours on low for 8 hours.
7.   Garnish with cilantro and dry roasted peanuts.
