SLOW ROASTED TOMATOES WITH GARLIC ENJOY DAN:


SLOW ROASTED TOMATOES WITH GARLIC AND BALSAMIC VINEGAR

                                                                                   By CHEF DAN:

4-5 servings

 

INGREDIENTS:

 

8 plum shaped tomatoes, halved lengthwise

2 tablespoon balsamic vinegar

3 tablespoons olive oil

6 cloves garlic, minced

1/4- cup parmesan cheese

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspon ground fennel

Sea salt and fresh ground rainbow peppercorns to taste

 

DIRECTIONS:     (PRE-HEAT OVEN TO 200 DEGREES)

 

1.   Combine all ingredients in a bowl.

2.   Through in the tomatoes halves to gently coat.

3.   Arrange tomatoes, cut side up, on a baking sheet coated with cooking spray.

4.   Roast at 200 degrees for about 7 hours.
