GARLIC AND SPINACH WITH SOY WOW!! ENJOY DAN:


GARLICKY SPINACH WITH MEYERS LEMON JUICE by CHEF DAN:

Serves 8

 

INGREDIENTS:

 

1-1/2-pound fresh spinach, rinsed and stems removes

2 tablespoons toasted sesame oil

4 garlic cloves chopped

2 tablespoon soy sauce

Juice of 1 Meyer’s lemon (a cross between a lemon and a mandarin orange)

Sea salt and fresh ground rainbow peppercorns

 

DIRECTIONS:

 

1.   Cook spinach in a pot salted boiling water and cook until just wilted.

2.   About 2 minutes.

3.   Drain, then transfer to ice-water to let cool.

4.   Drain and squeeze out excess water.

5.   Heat oil in a skillet over medium-heat.

6.   Add chopped garlic and sauté for 1 minute.

7.   Add spinach, soy sauce, and Meyer’s lemon juice.

8.   Stir to combine.

9.   Season with salt and pepper to taste.
