DAY 6 PAPAYA CHICKEN WOW!! ENJOY DAN:


                             PAPAYA CHICKEN by CHEF DAN:

Serves 4    (day six of the diet)

 

INGREDIENTS:

 

2 pounds chicken breast, boneless and skinless, cut into 1-inch pieces

1 papaya cut into chunks

2 tablespoons grape-seed oil

1 onion chopped

1 thumb-size fresh ginger

1 tablespoon cumin seeds

1 teaspoon fenugreek seeds

1 tablespoon fennel seeds

1 teaspoon smoky paprika

2 teaspoon ground coriander

1/2-cup low fat plain yogurt

 

DIRECTIONS:

 

1.    In a wok over medium-high heat and add the oil and heat till sizzling.

2.    Add the onion, ginger and cook 5 minutes.

3.    Add the garlic and sauté I minute.

4.    Add the cumin seeds, coriander, fenugreek seeds, fennel seeds and paprika and toast for 20 seconds.

5.    Add the chicken pieces and cook for about 7 minutes.

6.    Add yogurt and finish cooking the chicken, about 2-3 minutes more.

7.    Stir in the papaya chunks.

8.    Serve with couscous or Jasmine rice.
