THIS FOR GARLIC LOVERS AND THE NAME SAYS IT ALL ENJOY DAN

CHICKEN WITH 20-30 CLOVES OF GARLIC by CHEF DAN:
Serves

INGREDIENTS:

20-30 cloves garlic, peeled
3-4 pound chicken, cut up
2 tablespoons grape-seed oil
1 onion, chopped
1/3-cup red wine
1 teaspoon each thyme, oregano, and rosemary
1/2-teaspoon red pepper flakes
Salt and freshly ground black pepper

DIRECTIONS:                                 (PRE-HEAT OVEN TO 425 DEGRES)

1.     In a blender add garlic, oil, onion, red wine, thyme, and oregano, rosemary, and red pepper flakes.
2.     Puree until smooth.
3.     Set aside.
4.     With a sharp knife, make several slashes in each chicken piece to allow the marinade to penetrate.
5.     Place the chicken in a bowl.
6.     Pour garlic marinade over the chicken pieces.
7.     Toss thoroughly
8.     Place in zip lock bags and refrigerate overnight.
9.     Remove chicken from garlic marinade.
10.                        Season with salt and pepper.
11.                         Roast for about 45 minutes or internal temperature is 165 degrees.
12.                        Transfer to a platter and spoon any accumulated juices over the chicken.
