LEMONY SHRIMP WITH ANGLE HAIR PASTA THAT'S WHAT FOR DINNER TONIGHT ENJOY DAN:

                  SHRIMP SCAMPI WITH ANGLE HAIR PASTA by CHEF DAN:
Serves 4

INGREDIENTS:
1 pound peeled and divined shrimp
12-oz angel hair pasta
1/4-cup vermouth or white wine
1/2- cup cherry tomatoes, halved
6 garlic cloves, minced
Zest of two lemons
Juice from 2 lemons about 2 tablespoons
1 tablespoons butter
1 tablespoon olive oil
1 teaspoon red pepper flakes
2 tablespoons coarsely chopped fresh rosemary

DIRECTIONS:

1.     In a bowl combine garlic, zest and 1 tablespoon of lemon juice, 1 tablespoon olive oil, red pepper flakes, fresh rosemary, and salt pepper to taste.
2.     In a pot of boiling salted water, cook pasta according to package directions.
3.     Add shrimp to pot, and stir, immediately drain pasta and shrimp.
4.     Reserve 1/2- cup of pasta water.
5.     Set aside, shrimp will continue to cook.
6.     In the same pot heat butter over medium-heat.
7.     Add tomatoes, vermouth or white wine and garlic-zest marinade; cook stirring until garlic is golden, and tomatoes are somewhat blackened, and liquid has reduced to half about 2-3 minutes.
8.     Remove from heat; return pasta and shrimp to the pot.
9.     Add remaining lemon juice and enough pasta water to create a thin sauce that coats pasta.
10.                        Heat through and serve.
11.                         Season with salt and freshly ground pepper.
